Bayou Blackened Catfish Fillets
The sweetness of the fish lends itself beautifully to blackening spice. Shrimp, scallops, or any firm fleshed fish will work great. The cooking time will depend on the thickness of the fillets. The best way to preheat the skillet and the best way to blacken is outside on the grill. Trust me on this one. Heat the pan for at least 10 minutes over high heat. And don’t forget to clean the grill first! You will need:
Ingredients:
1 8-oz catfish fillet per person
vegetable oil
blackening spice (see recipe)
Method:
Preheat a 10-inch cast iron skillet until very hot. Brush each fillet with vegetable oil. Sprinkle some blackening spice evenly over the fish, turn over, and repeat. Place the fillets in the hot skillet, and blacken on each side for six to eight minutes, until the fish is firm. Use a spatula to turn the fish and to remove it from the pan. Plate and serve.
Cajun Blackening Spice
Blackening is a standard cooking technique that depends on two very important factors: A hot cast-iron skillet and a good blackening spice. The skillet sears in the flavor as it chars the spices. The tasting heat of your blend depends on the amounts and types of spices you use. Habanero or chipotle powder will add an extra kick. Here is a basic medium hot blend, although you can substitute a store-bought product if you prefer. You can use this versatile spice blend on just about any grilled fish or meat as well. You will end up with about two ounces of spice blend, which should be kept in a shaker for use or airtight container for longer storage. Feel free to increase the recipe proportionately.
Ingredients:
1 tablespoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon dried Italian seasoning
½ teaspoon cayenne powder
½ teaspoon salt
½ teaspoon black pepper
Method:
Blend all the ingredients thoroughly. For a finer blend, use a food processor. Catfish in a bag with vegetables, herbs, and beer butter sauce. “En Papillote” is the fancy French term for “baked in paper.” That’s almost exactly what we are going to do, except that we are making our “bag” out of aluminum foil because we’re cooking it on the grill, and paper wouldn’t stand a chance. Preparing fish in this manner creates a wonderfully aromatic, flavorful, and healthy dish. Omit (or add!) butter if you wish. An hour of prep is involved depending on your knife skills, and cooking takes 20-30 minutes depending on the thickness of the fillets. We are preparing four “bags,” one per guest. Serve with your favorite rice dish.
Ingredients:
4 8-ounce catfish fillets
4 cloves garlic, chopped
1 small red onion, cut into thin strips
1 small red pepper, cut into thin strips
1 small yellow pepper, cut into thin strips
4 teaspoons unsalted butter
fresh herbs (thyme, parsley, chives, etc.) coarsely chopped
kosher or sea salt
cracked black pepper
4-ounces lager style beer
4 pieces of aluminum foil, 16 by 20 inches each
Method:
Lay out the aluminum foil. Rub each piece with a little butter. Place the fish on the foil, then top with the remaining ingredients except the beer. Fold in one side then fold the foil around the fish, leaving one side open. Pour in the beer (1 ounce in each bag), close up the foil, and place on a hot grill. The fish should be cooked in about 20 minutes. Remove the bags from the grill and place on a serving dish. Using a fork and a sharp knife, cut open the bags to reveal a juicy, colorful, and aromatic surprise.

What To Expect:
Players will get the message early that the course will be more difficult this year. Nothing has changed. Big hitters can still reach this hole in two shots, and anyone who walks away without birdie feels as if he lost a shot to the field.

The bunker rarely comes into play, although Jeff Maggert ran into trouble here in 2003. The shortest par-4 on the course tempts the big hitters to use a driver, but the devilish green is the key on this classic short hole. A well-placed approach is a must here to avoid a three-putt.

personal note:
While living in Manhattan years ago spotted Schnabel twice, both times at galleries. The first sighting was at a group show being held at Tony Shafrazi Gallery. Schnabel was unshaven, wearing workboots and a sarong. He also had a bandana tied around his neck. Total mix-match. Had a laugh at that (but in a good way).
The second time I saw Schnabel was at Pace gallery where he was giving Francesco Clemente a tour of the "Fox Farm" painting series. Schnabel was very animated and used many sweeping gestures with his arms and hands while explaining/describing the pieces. Clemente was very silent while taking in the artwork just sort of nodding his head.

melon (recipe):
Bruleed Melon and Prosciutto
Melon wrapped with prosciutto is a timeless classic, but steal a cue from Chef Jose Garces (Amada Restaurant) and brule the melon first. The added texture is delectable. Serves four.
>> 1 small cantaloupe, cut into large chunks
>> 6 slices prosciutto
>> Sugar, to coat melon
1) Sprinkle sugar liberally over melon chunks.
2) Use a kitchen torch to carmelize the sugar. If you don’t have a kitchen torch, use the broiler, with the melon resting just beneath the flame. If you have a gas stove, use tongs to hold the melon sugar-side down toward the flame.
3) Slice the prosciutto to sufficiently cover the melon chunks. Top the bruleed melon with prosciutto, and serve immediately.

The modus operandi in these poems is fairly consistent: thinly fabulized autobiography meets resonant cultural reference funneled through a provisional form or persona. I'm hardly the first nineteen-year-old to steal from Kafka, Lou Reed or T. S. Eliot - and old Tom, he had it coming. So, no apologies here, no footnotes required. If I had to peg my loyalties anywhere, it would be somewhere on the bleaker corner of John Ashbery's surrealist side, close company with Charles Simic, James Tate, and co., always with an envious eye on Frank O'Hara, that marvelous swimmer. Oh, and Homer, too. Nothing in particular, but I often think it would be nice if someone compared my small poems favorable to Homer. A grad student can dream, can't he?

What a crock of shit. I know for a fact Jack Welch is just a cheap S.O.B. I watered and maintained his house plants twice a week for 2-3 years (Manhattan residence - Waldorf Astoria) and never once did he or his wife give the housekeeper a X-mas bonus or tip.
belated news: winning dish for the Second Annual PA Preferred Best Chef of Pennsylvania and it Countryside Regional was (1st plate) pan-seared swordfish served on a bed of argula with a pickled poblano/onion dressing. Entree: pan-seared duck breast with a raspberry/anchovy sauce topped with a fried egg yolk and smashed red skin potatoes with truffle oil. Fried sage leaves were the garnish.
Congrats to Blake Joffe, Head Chef of Bar Ferdinand who received $500 and will now compete in the State Championship early next year. (info via Weekly Press, Aug. 1, 2007)

WASHINGTON - President Bush's spy chief sought to defend Attorney General Alberto Gonzales against charges of lying to Congress in a technically worded statement yesterday that hinged on when the government's terror surveillance program got its name.
Senate Judiciary Committee members have questioned whether Gonzales told the truth when he testified last week that a 2004 confrontation between administration officials had not been about the president's secret wiretapping program.
The reason presented for Gonzales' claim: The "Terrorist Surveillance Program" wasn't given that name by the administration until 2006, long after Gonzales' now-famous effort to get then-Attorney General John Ashcroft to endorse it.
That response came from the director of National Intelligence, Mike McConnell, in a letter to Sen. Arlen Specter, a member of the committee.
